Stacked Shrimp & Avocado Tapas
Recipe: Stacked Shrimp & Avocado Tapas


  • 3-4 tablespoons mayonnaise
  • 12 thin bread rounds*
  • 12 thin slices of smoked salmon, cut to fit bread rounds
  • 12 whole basil leaves
  • 12 thin slices of ripe avocado, cut to fit bread rounds
  • 12 cooked shrimp
  • 12 thin (1 1/2”) slices of serrano ham or prosciutto
  • 12 toothpicks


  1. Spread mayonnaise on each bread round. In this order, layer ingredients atop bread: salmon, basil, and avocado.
  2. Cut each shrimp in half horizontally through the center, sandwich-style, and place, criss-cross, atop each avocado slice. Smear a bit of mayonnaise atop shrimp.
  3. Roll ham and place on top of shrimp; the mayonnaise helps keep the ham secure. Skewer with a pick and serve.

*I purchased a freshly baked demi baguette from Whole Foods and sliced it into rounds.

Time: 35 minutes

Number of servings (yield): 12 tapas
