Pub-Styled Cheddar-Beer Spread for Super Bowl

Recipe: Pub-Styled Cheddar-Beer Spread
8-12 ounces of your favorite beer
2 pounds extra sharp brick Cheddar cheese, cut into 1-inch pieces
4 tablespoons tomato paste, Amore double concentrated tomato paste preferred
1/2 tablespoon minced garlic
1/2 tablespoon (or more to taste), Worcestershire sauce
1 tablespoon finely chopped scallions, optional
1 tablespoon finely chopped parsley, optional
Pour 1/4 cup of beer in the bottom of a food processor. Top with Cheddar chunks, tomato paste, garlic and 1/2 tablespoon Worcestershire.
Pulse processor, gradually adding beer and checking consistency, until mixture is spreadable but not too soft. Stir in scallions and parsley, if using, and additional Worcestershire sauce to taste. Put cheese in a decorative mold or crock; refrigerate at least six hours, and up to 48 hours before serving.
