Gluten-Free Black Bean Brownies

Recipe: No-Cook Gluten-Free Brownies
Ingredients
1(15 1/2oz) can of black beans, rinsed & drained ( 1 1/2 cups)
3 large eggs
5 tablespoons unsweetened cocoa powder*
Pinch of salt
1 teaspoon vanilla
¾ cup white sugar
1/4 cup chocolate chips, optional
1/2 cup chopped walnuts, optional
Powdered sugar, optional
Instructions
Preheat oven to 350˚.
Purée the black beans, eggs, cocoa powder vanilla and sugar in a food processor (or blender) with a pinch of kosher salt.
Stir in nuts and/or chocolate chips, if using. Pour into a greased 8x8-inch pan. Bake on middle rack of oven 30 minutes, or until an inserted toothpick comes out clean. Sprinkle with powdered sugar, if using. Let them cool completely before cutting.
