Gluten-Free Black Bean Brownies

No-Cook Gluten-Free Brownies
Recipe: No-Cook Gluten-Free Brownies

Ingredients

  • 1(15 1/2oz) can of black beans, rinsed & drained ( 1 1/2 cups)
  • 3 large eggs
  • 5 tablespoons unsweetened cocoa powder*
  • Pinch of salt
  • 1 teaspoon vanilla
  • ¾ cup white sugar
  • 1/4 cup chocolate chips, optional
  • 1/2 cup chopped walnuts, optional
  • Powdered sugar, optional

Instructions

  1. Preheat oven to 350˚.
  2. Purée the black beans, eggs, cocoa powder vanilla and sugar in a food processor (or blender) with a pinch of kosher salt.
  3. Stir in nuts and/or chocolate chips, if using. Pour into a greased 8x8-inch pan. Bake on middle rack of oven 30 minutes, or until an inserted toothpick comes out clean. Sprinkle with powdered sugar, if using. Let them cool completely before cutting.

*I used Drosté, imported from Holland
