Asparagus Salad with Caesar Dressing

Ever since I procured my  friend, Donna’s,  secret Caesar
Salad dressing,
I can’t get enough! I try to keep a jar of this homemade
Caesar Salad dressing in my fridge at all times. It keeps well and make a  fantastic marinade for chicken, fish and vegetables.

The dressing can be substituted with freshly squeezed lemon juice, olive oil and minced garlic.

Recipe: Asparagus Salad with Caesar Dressing

Ingredients

  • 2-3 dozen asparagus, woody ends broken or trimmed off
  • 3 tablespoons homemade Caesar Salad Dressing (recipe link above)
  • Fresh Parmigianno Reggiano shavings

Instructions

  1. Adjust oven shelf to middle-upper level. Preheat oven to 425˚.
  2. Roll asparagus in dressing. Place on foil-lined baking sheet and roast 8-10 minutes for pencil-thin asparagus and up 16 minutes for thick asparagus.
  3. Serve garnished with freshly ground pepper and Parmesan shavings.

Time: (includes time to make dressing) 15 minutes

Number of servings (yield): 2-3
