Winter Tomato Gratin
Recipe: Winter Tomato Gratin


  • 3 tablespoons extra virgin olive oil
  • 4 tomatoes, cored and cut into 1/2-inch slices
  • 1/4 cup chopped fresh basil
  • 1 teaspoon minced garlic
  • 1 cup panko (Japanese bread flakes) or bread crumbs
  • 1/2 cup grated Asiago cheese


  1. Preheat oven to 475˚.
  2. Brush a 9-inch gratin dish or shallow oven proof casserole with 1 tablespoon of the olive oil. Arrange tomato slices in dish, overlapping if necessary. Season with kosher salt and freshly ground pepper. Evenly sprinkle basil over tomatoes.
  3. In a small sauté pan, heat remaining oil over low heat. Add garlic and sauté until fragrant, about 2 minutes. Remove from heat and stir in panko or bread crumbs and asiago.
  4. Sprinkle seasoned panko or bread crumbs over tomatoes. Bake on middle rack of oven until crumbs are golden, about 15 minutes.

Bake Time: 15 minutes

Number of servings (yield): 4 side dishes
