Pan-Seared Lamb Chops
Recipe: Pan-Seared Lamb Chops


  • 2 tablespoons finely chopped fresh mint leaves Zest from one lemon
  • 1 teaspoon minced garlic
  • 1 teaspoon extra virgin olive oil
  • 4 lamb chops
  • 1 tablespoon grape seed or canola oil


  1. Make a mint gremolita by combining mint, lemon zest, garlic and olive oil in small bowl.
  2. Pat lamb dry with paper towels and season with kosher salt and freshly ground pepper.
  3. Heat oil in a large sauté pan over medium high heat .
  4. Add the lamb chops and sear. After 1 minutes, reduce heat slightly and cook until the chops are golden on each side - about 4 minutes on each side. (My chops were 1 1/4-inch thick)
  5. Sprinkle lamb with gremolita and serve.

Time: 15 minutes

Number of servings (yield): 2 servings (2 chops per person)
