Pea Pod-Nectarine Salad

Pea Pod-Nectarine Salad

My dear friend Mara entrusted me to keep an eye on her daughters, Eva and Marina. I was engrossed in my latest recipe creation when I realized Eva was nowhere to be found. I seeked high and low only to discover her – guilty and merrily – munching away on my sugar snap vines.

Concern melted to consternation.  Hey wait – leave some for me. Dinner plans must be quickly altered if I wanted to have any of these seasonal goodies for myself.

If you’ve never tried sugar snaps, now’s your chance. Tables are packed with them at the Farmer’s Market and your local  grocery.

Nectarine slices have the same graceful shape as the sugar snap and their sweet, soft juiciness are the perfect counterpoint to the crunchy peas.
