Seared Sesame Scallops with Mango Salsa
Recipe: Seared Sesame Scallops with Mango Salsa

  • 1 mango, peeled and diced*
  • 1/2 tablespoon lime juice
  • 1 tablespoons chopped fresh cilantro, plus several sprigs for garnish
  • 1 tablespoon finely diced red onion
  • 12 dry scallops
  • 2 tablespoons (light) soy sauce
  • 1/3 cup white sesame seeds
  • 2 tablespoons (light) soy sauce
  • 2 tablespoons canola oil

  1. Make a salsa by combining diced mango, lime juice, cilantro and red onion.
  2. Toss scallops with soy sauce then coat all sides with sesame seeds.
  3. Heat heavy sauté pan for 1 minute. Add canola oil. When oil begins to shimmer, sear crusted scallops on both sides until just cooked through. (Review technique in headnote.)
  4. Place 3 scallops on 4 plates. Top with salsa, garnish with cilantro sprigs and serve.

*Time-saving Tip: Some grocers sells pre-packed, fresh diced mango

Time: 30 minutes

Number of servings (yield): 4 appetizers (3 scallops per plate)
