Recipe: Tomato-Cucumber Raita



  1. In a large bowl, whisk together yogurt, milk, pepper flakes and 1/4 tablespoon of masala, adding additional masala to taste.
  2. Stir in cilantro, mint, onion, cucumber and tomato. Season to taste with kosher salt and additional hot chili peppers to taste, if using. Let sit at room temperature, stirring occasionally, an hour or so for flavors to combine. May also be refrigerated up to 24 hours before serving.

*The chili pepper flakes and the ground chili pepper in chaat masala may lend enough heat for your palate, so add additional chopped pepper at your discretion; remember to wear plastic gloves when handling chili peppers.

Number of servings (yield): 6 cups

Time: 15 minutes
