Make-Ahead Brunch Strata
Recipe: Make-Ahead Brunch Strata


  • 1 pound bulk raw sausage, sausage selected depends on palate (see above notes)
  • 6 large eggs
  • 1 teaspoon dry mustard (or 1 teaspoon Dijon mustard)
  • 2 cups milk or half-and-half
  • 5-6 slices bread, challah preferred, cut into 1-inch cubes (4 cups total)
  • 1 cup grated sharp Cheddar cheese
  • Quartered Campari tomatoes, optional


  1. Preheat oven to 350 degrees.
  2. Over medium heat, brown sausage in a heavy-bottomed saute pan; drain fat and reserve.
  3. Beat eggs with 1 teaspoon kosher salt and pepper*, and dry mustard or Dijon; whisk in milk or half-and-half. Stir in bread, cheese and browned sausage.
  4. Place mixture in oiled 8 X 12-inch casserole. (May be covered & refrigerated up to 16 hours prior to baking at this point, if desired.)
  5. Bake, uncovered, 35-45 minutes, or until golden brown. Let sit 5-10 minutes then serve hot garnished with quartered Campari tomatoes, if desired.

*If sausage used has enough sodium &/or pepper, you should omit.

Active Time: 20 minutes

Bake Time: 35-45 minutes
