Fried Eggs and Cheesy Tortillas
Recipe: Fried Eggs and Cheesy Tortillas


  • 4 cherry tomatoes, chopped
  • 1 teaspoon diced onion
  • 1 teaspoon chopped cilantro or parsley
  • 1 tablespoon canola oil
  • 2 (7 1/2-inch) tortillas, corn or wheat
  • 1/2-1 cups grated cheese; cheddar, queso, jack or mozzerella
  • 2 tablespoons prepared salsa
  • 2 eggs


  1. Combine chopped tomato, onion, cilantro or parsley. Set aside.
  2. In a large sauté pan, heat oil to medium heat. Place one tortilla in pan and sprinkle with 1/4-1/2 cup cheese, according to taste, placing a tablespoon of salsa in the center. When tortilla is lightly browned on bottom and cheese is melted, about 3-4 minutes, fold in half.
  3. Crack egg next to tortilla, lightly season with kosher salt and freshly ground pepper, and fry until desired level of doneness; sunnyside-up or over-easy.
  4. Serve egg atop tortilla and garnish with 1/2 tomato-onion mixture and serve.
  5. Repeat process.

Time: 20 minutes (cooking in batches)

Number of servings (yield): 2 tortillas
